I LOVE this idea. Not that I've made it yet. But I do a lot of the other, and why have these two changes never occurred to anyone before? It's time for a variant, and it sounds delicious.
Now may I turn to a different though related issue. For those who like making chicken stock, why has it become impossible to buy big old chickens - mature hens like myself - the kind that produce stock worth making? No doubt Big Farma is partly to blame. Do you - or does anyone - know of a source?
Curious where you live... perhaps some live poultry shops (in New York, largely Halal spots... a very um... interactive experience) could be the solution?? They are not ubiquitous but they do exist....
Nora, thank you. I live in Manhattan, where as you probably know (based on your brief bio) just trying to find a car wash is an um interactive experience (an expression I plan to shoplift.) Exhausted just thinking about it, but I will try.
LOVE Better than Bouillon especially the veggie one. I make my own stock for my onion soup, which is really just onions and a spritz of stock, and add the add a little of the beggie Better than Bouillon to give it an extra dimension.
Nora, I so appreciate your answer (live poultry shops!!? in Sunset Park!!? who knew?), and I am going to write down this info, but I must confess that I'm not going to use it soon. Just before the pandemic I tried a number of different options in something of a frenzy. Everything was a failure in terms of really strong stock, but I froze all the results anyway (because you know, don't waste food), including the cooked chicken. My pandemic project wasn't sourdough but using that chicken up. Not yet. Working on it. Most recently with a recipe based on Campbell's canned cream of chicken with canned Chinese noodles on top (this was from a cook-like-grandma cookbook from Housing Works I've now misplaced, I'm trying not to panic.) Better than you might think. When I go to Elbadie, I will report! Thank you, thank you.
